As this month is Green month here at MCC we thought the recipe of the month should feature a delicious green vegetable to start off your day on the right foot. This Kale and eggs is delicious and packed with tons of nutrients. The kale in this recipe has almost 3 grams of fibre and is packed full of vitamins A, C, K, and B!!

This recipes also has 5 ingredients and takes no more than 10 minutes to make!!


  • 1 bunch of kale
  • 1 tbsp olive oil
  • 2 green onions
  • Herbamere
  • 2 eggs OR 4 egg whites


  1. Wash and chop the kale.
  2. In a stove top pot, start to boil the boil water (2 cups). As it starts to boil, add the kale and cook for 10 minutes.
  3. In a pan, sauté the oil and add the two green onions (chopped including, the stem). Sauté for 5 minutes.
  4. Drain the kale and add it to the onions. Add a dash of herbamere and cook for 2 minutes.
  5. Crack the eggs directly on the bed of kale and cook until your eggs are cooked to your liking
