The following ingredients are for one serving, so simply double or triple the mix if you want to make more. By the way, these guys freeze great, so you can make a larger batch, freeze using parchment paper and then throw in the toaster for your own frozen pancake!
INGREDIENTS
1/2 cup 1% cottage cheese + 1 whole egg + 2 egg whites + 1.5 tbsp wheat germ or milled flax seeds + 1/3 cup whole wheat flour + 0.5 tbsp olive oil
(topping 2 frozen strawberries and a sprinkle of cinnamon)
In a bowl combine cottage cheese, oil, whole egg and egg whites. In another bowl mix the flour and wheat germ. Combine the two mixtures. Heat a non-stick pan, and drop 2 tbsp of the mixture, cook on medium, until golden.
For a topping, microwave the strawberries for 1 minute. Mash with a fork and sprinkle a dash of cinnamon, pour on top of the cooked pancakes.
