This low carb meal is perfect for those looking for comfort food without grains. This rice alternative dish packs in 3 servings of vegetables per serving and is loaded with fibre. Another great perk is that this stir fry is much lower in sodium vs traditional dishes.
Here is what you need:
- 1 cauliflower head
- 1-2 cups mixed vegetables, chopped
- 1 whole egg
- 3 egg whites
- 3 tbsp soy sauce
- 1 tbsp olive oil
- 3 garlic cloves, minced
- Salt & pepper to taste
Here’s what you need to do:
Break cauliflower into small pieces and put into food processor. Grind cauliflower until it resembles rice. Heat oil in over high heat and add cauliflower. Cook until cauliflower begins to turn brown, stirring occasionally to avoid sticking. Add garlic and vegetables and cook for 4-5 minutes more. Make a well in the center of the pan – break the egg and pour egg whites here. Scramble eggs lightly trying to not mix too much with “rice”. Once eggs are cooked, gently mix with other ingredients until fully cooked. Add soy sauce, salt, pepper and mix well. You can use cauliflower as a rice alternative in many other recipes!
