Preheat oven to 400F and set aside a small baking sheet.
Thoroughly wash and scrub 2 sweet potatoes and remove the tips from either end. Slice horizontally into thirds, then cut each section into thirds again. You should be left with a total of 8-10 wedges.
Soak the cut potato in cold water for at least 20 minutes, up to an hour if you have the time, to remove some of the starch content. (This helps make crispy fries!).
Drain and rinse well, to ensure the starch is removed, then pat dry with a towel, so that the resulting fries are nice and dry.
Coat wedges with 2 tbsp olive oil, 1/2 tsp dried rosemary and a pinch of sea salt and place on a baking sheet.
Place in the oven for 25-30 minutes, flipping halfway through.
When done, place on a cooling rack for 5 minutes for to make them crispy.
Power Garlic Aioli
Place 3/4 cup 0% plain Greek yogurt, 2 tbsp fresh lemon juice and 1-2 cloves garlic in a food processor and blend until smooth.
Garnish with a little rosemary and serve!
