There will come a time in the week that your family will want pasta and you will cringe at the idea of that many CARBS!  This recipe is a WIN WIN: for your family you can make spaghetti and for the carb watchers try the shirataki noodles.

Shirataki noodles have long been a favorite “dieters” food because its nutritional panel is A+: half a pack contains less that 5 grams of carbohydrates, of which come from fibre.

Here’s what you will need:

1 pack shirataki noodles,

150g of light ricotta,

1 tsp olive oil, sea salt to taste

Here’s what to do:

Boil water in a medium size pot, add the shirataki noodles and cook at a rolling boil for 5 minutes.  While the shirataki noodles are cooking, place the ricotta in a bowl and add the oil and sea salt and whisk.  While whisking, take 1/2 ladle of boiling water from the noodles and add to the ricotta to make it creamier.  Drain the noodles, and add to the ricotta and serve.
