This is probably my favourite low carbohydrate meal, WHY? Because it hits all satisfaction points of a meal, its warm, every bite fills the mouth and the different textures of soft and chewy hit a feeling of home.
This is key on low carb days, find foods that can satisfy…I typical bulk up on cauliflower, zucchini and fennel for veggies, and use coconut, nuts and cheese for fats.
what you will need
1 lb ground chicken, 4 cups finely chopped mushrooms, 1 garlic clove, 1 tsp oregano, 2 tsp fresh basil (chopped), 1 can tomatoes (plum) and blend them in a blender, 1 lb zucchini (sliced lengthwise: 4-6 slices per zucchini) 1 cup grated reduced fat cheese (provolone or mozzarella).
what to do
Preheat the oven to 375°F. In a large pan, brown the ground chicken, when finished, drain the fat. Add mushrooms, garlic, oregano, basil and a little salt to chicken and cook until mushrooms are tender. Stir the can of blended tomato and cook for 15 minutes. Turn off the heat.
Cover the bottom of a lasagna dish with one layer of zucchini, followed by 1/2 the meat sauce and 1/2 the cheese. Repeat and cover with foil. Bake for 1 hour at 375°F.
Worries about to much water from the zucchini? It is best to cut the zucchini earlier in the day and then have it sit on the counter top on a paper towel.
This makes 4 large servings! 1 servings is less than 20 gram of carbs, 35 g protein and 6 g fat.
