This quick, easy, and delicious salad is a great way to use our product of the month FreshCooked grains, legumes and vegetables as a side for any main dish that has a kick of protein from the Quinoa.
Ingredients:
- 1 Package of FreshCooked White and Red Quinoa (250g)
- 1 medium avocado (cubed)
- 1 cup cucumber (chopped)
- 1 cup grape tomatoes (sliced)
- 1/3 cup yellow pepper (sliced)
- 1/4 cup parsley (chopped)
- 1/2 cup red onions (chopped)
Dressing:
- 1/2 cup olive oil
- 4 Tbsp lemon juice
- 1 clove garlic (minced)
- 1 Tbsp sugar
- 1 tsp salt
- 1/8 tsp black pepper
- 1/8 tsp cayenne pepper
Directions
1. Combine quinoa, avocado, cucumbers, tomatoes, peppers, herbs and onion in a bowl
2. Whisk oil, lime juice, garlic, sugar, salt, pepper and cayenne pepper together in a separate bowl until well combined.
This recipe would be a great pair with a 4 oz piece of Salmon or chicken
