With our MCC PUSH to Summer in full gear – many members are exploring lower carbohydrate meal choices.  The other night, as I was making traditional quesadillas for my family, I was not feeling like eating the toppings on a salad – which is what I typically do – instead, I had a little fun in the kitchen and came up with this…

First, let’s start with my families meal – as it did look great, but I was just as happy with mine!  I want however to illustrate how simple it is to eat with your family when you are restricting certain foods…

My ingredients for one of my quesadillas included 1/2 cup chopped zucchini + 1/2 cup chopped onion + 2 eggs + 1/2 tsp olive oil + 1 tsp light sour cream + 1 tbsp avocado + 1 tbsp grated cheese (I used light cheddar) + 1 tbsp salsa + jalapenos (optional if you want the heat – I did use it my recipe and used the jarred ones about 4 in total).

I started by sauteing the zucchini and onion in the oil.  While sauteing for a few minutes, I whisked the eggs, and then poured and mixed with the veggies and cooked the mix omelet style.  Once cooked, I placed it in a dish and added the garnishes on top!  That’s it!  For the family, I then placed the omelet between two wraps and added the cheese and baked for 10 minutes.

Such a simple meal and delish!
