The holidays are on their way as so are the mashed potatoes, sweet potatoes and tons of other high carb side dishes we all love. This year keep the carbs under control and try making this great Mock Mash with cauliflower instead. The family will love it!

What you need:

  • 2 cups cauliflower
  • 1 cup mini carrots
  • 1 tbsp olive oil (can be replace with 1 tbsp of cream cheese for a more creamy taste and texture)
  • 2 tbsp milk
  • Herbamere or low sodium spice of your choice

What to do:

Preheat oven at 350F. Boil the cauliflower and carrots. Drain and set aside. Puree or hand mash the veggies, adding in the oil, milk and herbamere.
