These no-bake eggnog bites are a festive way to enjoy the holidays. They are perfect to stash in the freezer for that quick grab & go snack or for when you need an “eggnog” treat. A lovely addition to any holiday dessert tray!
Here is what you need
- 1/2 cup Almond Flour
- 1/4 cup Coconut Flour
- 1 scoop Protein Powder
- 2 tbsp Granulated Maple Sugar
- 1/4 tsp Sea Salt
- 1/4 tsp Ground Nutmeg
- 1/4 cup Cashew Butter
- 2 Tbsp Brown Rice Syrup
- 1/4 cup Eggnog (Silk brand when available)
- 1/4 tsp Ground Cloves
In a large mixing bowl, combine the flour, sweetener, sea salt and cloves and mix well. In a microwave-safe bowl or stovetop, heat your nut butter with your sticky sweetener until combined. Pour your wet mixture to the dry mixture and mix well. Add the Eggnog until a thick batter is formed- If the batter is too thin, add a dash more coconut flour. Using your hands, form into small bite-sized balls. Roll balls in optional gingerbread/sugar mixture, coconut flakes, chopped dried cranberries or chopped nuts and place on a baking tray or plate. Refrigerate for at least 10 minutes to firm up.
